Almond Ricotta
- 2 cups Slivered Almonds
- 1/2 cup Water
- 2 tbsp Lemon Juice
- 1 tbsp Nutritional Yeast (optional)
- 1/2 tsp Salt
Macerated Strawberries
- 1/2 pint Fresh Strawberries (hulled and quartered)
- 2 tbsp Granulated Sugar or Agave Syrup
- 1/2 Lemon (juiced)
- Pinch of Salt
Instructions
For the Macerated Strawberries
- Slice strawberries into quarters.
- Juice half of a lemon.
- Add strawberries, lemon juice, sugar, and salt to a medium bowl.
- Stir and cover.
- Refridgerate for at least 1 hour.
For the Almond Ricotta
- In the food processor, blend slivered almonds, salt, lemon juice, nutritional yeast (optional). Adding the water gradually to ensure the your desired consistency and texture.
- Spread ricotta on toasted bread and top with the macerated strawberries.
