Almond Ricotta Toast with Macerated Strawberries

Almond Ricotta

  • 2 cups Slivered Almonds
  • 1/2 cup Water
  • 2 tbsp Lemon Juice
  • 1 tbsp Nutritional Yeast (optional)
  • 1/2 tsp Salt

Macerated Strawberries

  • 1/2 pint Fresh Strawberries (hulled and quartered)
  • 2 tbsp Granulated Sugar or Agave Syrup
  • 1/2 Lemon (juiced)
  • Pinch of Salt


For the Macerated Strawberries

  1. Slice strawberries into quarters.
  2. Juice half of a lemon.
  3. Add strawberries, lemon juice, sugar, and salt to a medium bowl.
  4. Stir and cover.
  5. Refridgerate for at least 1 hour.

For the Almond Ricotta

  1. In the food processor, blend slivered almonds, salt, lemon juice, nutritional yeast (optional). Adding the water gradually to ensure the your desired consistency and texture.
  2. Spread ricotta on toasted bread and top with the macerated strawberries.
