This creamy dragon fruit chia pudding is the perfect healthy breakfast or mid-day snack. It’s easy to make, perfect for meal prep, and has a subtly sweet dragon fruit flavor.


Ingredients

  • 1 cup Coconut Milk (unsweetned)
  • 1/4 cup Chia Seeds
  • 1 cup Frozen Dragon Fruit (cubed)
  • 1 tbsp Maple or Agave Syrup
  • 1 tbsp Lemon Juice

Instructions

  1. Add the coconut milk, dragonf ruit, sweetener, and lemon juice to a blender. Blend until smooth and fully combined.
  2. In a medium-sized bowl or container, add the blended liquid and chia seeds. Stir until the chia seeds are fully incorporated.
  3. Cover and allow the pudding to set in the fridge for 1 hour, then stir the mixture and return it to the fridge to finish setting for an additional 2 hours or overnight.
  4. Serve with your favorite fruit and granola.
