This creamy dragon fruit chia pudding is the perfect healthy breakfast or mid-day snack. It’s easy to make, perfect for meal prep, and has a subtly sweet dragon fruit flavor.

- 1 cup Coconut Milk (unsweetned)
- 1/4 cup Chia Seeds
- 1 cup Frozen Dragon Fruit (cubed)
- 1 tbsp Maple or Agave Syrup
- 1 tbsp Lemon Juice
Instructions
- Add the coconut milk, dragonf ruit, sweetener, and lemon juice to a blender. Blend until smooth and fully combined.
- In a medium-sized bowl or container, add the blended liquid and chia seeds. Stir until the chia seeds are fully incorporated.
- Cover and allow the pudding to set in the fridge for 1 hour, then stir the mixture and return it to the fridge to finish setting for an additional 2 hours or overnight.
- Serve with your favorite fruit and granola.
