This easy homemade apple pie filling recipe can be made quickly at home to accompany or be the star of just about any dessert.

- 5-6 Apples (Granny Smith)
- 2 tsp Vanilla Extract
- 2 tsp Lemon Juice
- 1/4 cup Light Brown Sugar (packed)
- 1/4 cup Granulated Sugar
- 1/4 cup Unsalted Vegan Butter
- 1 tsp Ground Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Ginger
- 1 tbsp Cornstarch
Instructions
- Peel and dice the apples into small chunks.
- Using a small saucepan, melt the butter over medium heat.
- Stir in the apples, lemon juice, and vanilla, then simmer for about 5 minutes to allow the apples to start releasing their juices.
- Stir in the sugars and spices and continue to simmer until the sugars dissolve.
- Add the cornstarch and continue to simmer the apples for 1-2 minutes before removing them from the heat. The syrup will thicken more as it cools.
