Sweet Whipped Ricotta Toast with Fresh Peaches
- 1/2 cup Vegan Ricotta (I use Kite Hill Almond Ricotta.)
- 2 Fresh Peaches
- 1/4 cup Pistachios
- 2 tbsp Agave or Maple Syrup
- 1 tsp Vanilla Extract
- 1/8 tsp Salt
Peanut Butter Banana Cacao Toast
- 1/4 cup Peanut Butter
- 1 Banana
- 1 Tbsp Cacao Nibs
- 1 Tbsp Hemp Seeds
- 2 Tbsp Maple Syrup
- 1/2 tsp Cinnamon (optional)
Chocolate Hazelnut Berry Toast
- 1/4 cup Chocolate Hazelnut Spread (I use Justin's Chocolate Hazelnut and Almond Butter.)
- 1 cup Fresh Strawberries (Hulled and sliced.)
- 1/2 cup Fresh Blueberries (Halved)
- 1 tsp Chia Seeds
Romesco & Roasted Cauliflower Toast
- 1/4 cup Romesco Sauce
- 1 cup Cauliflower Florets
- 2 tbsp Olive Oil
- 1 tsp Italian Herb Seasoning
- 1 tsp Garlic Powder
- 1/2 tsp Paprika
- 1/4 tsp Salt
Hummus Toast with Broccolini & Heirloom Tomatoes
- 4 Broccolini Stalks (Halved lengthwise )
- 1/4 cup Hummus
- 1/4 cup Heirloom Cherry Tomatoes (Halved)
- 2 tsp Balsamic Glaze
- 1 Garlic Clove
- 3 Tbsp Olive Oil
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Toast the bread using a toaster or on the stove by adding the olive oil to the skillet on medium-high heat. Toast the bread on both sides to your desired darkness, then remove them from the skillet.
Sweet Whipped Ricotta Toast with Fresh Peaches
- Add the ricotta, agave syrup, vanilla extract, and salt to a food processor and blend until thoroughly combined and smooth.
- Half, remove the pits, and thinly slice the peaches.
- Coarsely chop the pistachios.
- In a dry skillet on medium-low heat, toast the pistachios until they are slightly browned and fragrant, about 3-5 minutes.
- Spread a generous amount of the whipped sweet ricotta onto the toasted bread then add the sliced peaches and toasted pistachios. Finish with a sprinkle of cinnamon and enjoy.
Peanut Butter Banana Cacao Toast
- Slice the banana into ¼-inch thick slices.
- Spread a generous amount of peanut butter onto each toast.
- Top with sliced bananas, cacao nibs, and hemp seeds. Finish with a sprinkle of cinnamon and a drizzle of maple syrup and enjoy.
Chocolate Hazelnut Berry Toast
- Hull and slice the strawberries.
- Slice the blueberries in half.
- Spread a generous amount of the chocolate hazelnut spread.
- Top with the sliced berries, sprinkle with chia seeds, and enjoy!
Romesco & Roasted Cauliflower Toast
- Preheat the oven to 425℉.
- On a lined baking sheet, arrange the cauliflower florets in a single layer.
- Drizzle the cauliflower with olive oil and season with garlic powder, Italian seasoning, paprika, and salt.
- Toss the cauliflower in the oil and seasonings until fully coated and roast or 15-20 minutes.
- Spread a thin layer of romesco sauce onto the toasted bread.
- Top with the roasted cauliflower and pumpkin seeds and enjoy.
Hummus Toast with Broccolini & Heirloom Tomatoes
- Trim the broccolini stems and slice lengthwise.
- Peel and chop one garlic clove.
- Heat the olive oil in a skillet on medium heat.
- Sauté the broccolini until tender, about 3-5 minutes. Season with salt and pepper then remove the broccolini and set aside.
- In the same skillet, add the tomatoes and garlic and continue to saute’ until the tomatoes burst and are slightly browned.
- Spread a thin layer of hummus on the toasted bread.
- Top with broccolini, tomatoes, and garlic, and finish by drizzling on the balsamic glaze and enjoy.
