Sweet Whipped Ricotta Toast with Fresh Peaches

  • Bread: I like to use rustic bread or whole wheat bread for this recipe.
  • Fresh Peaches: the juiciest and ripest peaches you can find for the sweetest flavor.
  • Vegan Ricotta: I like to use the Kite Hill brand ricotta for convenience. I've also used their vegan cream cheese in a pinch.​​ But, if you want to make your own ricotta, I recommend my almond ricotta recipe.
  • Agave or Maple Syrup: to sweeten the ricotta.
  • Vanilla Extract: adds warmth and depth to the ricotta.
  • Sea Salt: heightens all of the flavors.
  • Cinnamon: this is optional for extra flavoring.
  • Pistachios: for a nice crunch and added nutrition.
  • Olive Oil: to toast the bread if you are using a skillet instead of a toaster.

  • Bananas: pair perfectly with peanut butter and add sweetness.
  • Cacao Nibs: for a chocolatey flavor and added nutrition.
  • Hemp Seeds: a great source of omega-3 fatty acids
  • Maple Syrup: to drizzle on top for a touch more sweetness.

Romesco & Roasted Cauliflower Toast

  • Bread: rustic or sourdough bread are great for this toast.
  • Romesco Sauce: A store-bought version keeps things simple. I used Trader Joe’s Romesco Sauce.
  • Cauliflower: a really great source of calcium, fiber, and antioxidants. I find it easy to use pre-cut florets.
  • Olive Oil: some for roasting the cauliflower and some for toasting the bread.
  • Seasonings: Italian herb seasoning, garlic powder, paprika, sea salt.
  • Pumpkin seeds (pepitas): For added nutrition and crunch.

Hummus Toast with Sauteed Broccolini & Heirloom Tomatoes

Hummus Toast w/Sauteed Broccolini & Heirloom Tomatoes

  • Bread: I prefer sourdough for this toast for the added flavor.
  • Hummus: a great source of protein. For this, I used garlic-flavored hummus.
  • Broccolini: these are a great source of fiber and protein and have a milder flavor than broccoli.
  • Grape or Cherry Tomatoes: I used heirloom cherry tomatoes since they were in season, but regular ones are great too.
  • Garlic: to add delicious aromatic flavor.
  • Olive Oil: for cooking the veggies and toasting the bread.
  • Salt & Pepper: to heighten the flavors.
  • Balsamic Glaze:  for added sweetness and to balance all of the ingredients.

How to Make These Simple Vegan Toasts

Sweet Whipped Ricotta Toast with Fresh Peaches

  1. Slice. Half, remove the pits, and thinly slice the peaches.
  2. Chop. Coarsely chop the pistachios.
  3. Whip the Ricotta. To a food processor, add the ricotta, agave syrup, vanilla extract, and salt. Blend until thoroughly combined and smooth.
  4. Toast. In a dry skillet on medium-low heat, toast the pistachios until they are slightly browned and fragrant, about 3-5 minutes. 
  5. Add the olive oil to the skillet and raise the heat to medium-high. Toast the bread on both sides to your desired darkness, then remove them from the skillet.
  6. Spread a generous amount of the whipped sweet ricotta onto the toasted bread then add the sliced peaches and toasted pistachios. 
  7. Finish with a sprinkle of cinnamon and enjoy.

Peanut Butter Banana Cacao Toast

  1. Toast the bread in the skillet or in a toaster to your desired darkness.
  2. Slice the banana into ¼-inch thick slices.
  3. Spread a generous amount of peanut butter on the toast.
  4. Top with sliced bananas, cacao nibs, and hemp seeds.
  5. Finish with a sprinkle of cinnamon and a drizzle of maple syrup and enjoy.

Chocolate Hazelnut Berry Toast

  1. Hull and slice the strawberries.
  2. Slice the blueberries. This is optional but helps to keep them from rolling off of the toast.
  3. Toast the bread in the skillet or in a toaster to your desired darkness.
  4. Spread a generous amount of the chocolate hazelnut spread.
  5. Top with the sliced berries.
  6. Sprinkle with chia seeds and enjoy!

Romesco & Roasted Cauliflower

  1. Preheat the oven to 425℉. 
  2. Arrange. On a lined baking sheet, arrange the cauliflower florets in a single layer. 
  3. Drizzle the cauliflower with olive oil.
  4. Season the cauliflower with garlic powder, Italian seasoning, paprika, and salt. 
  5. Toss the cauliflower in the oil and seasonings until fully coated.
  6. Roast the cauliflower for 15-20 minutes.
  7. Toast the bread in the skillet or in a toaster to your desired darkness.
  8. Spread a thin layer of romesco sauce onto the toasted bread.
  9. Top with the roasted cauliflower and pumpkin seeds and enjoy.

Hummus Toast w/Sauteed Broccolini & Heirloom Tomatoes

  1. Trim the broccolini stems and slice lengthwise.
  2. Peel and chop one garlic clove.
  3. Heat the olive oil in a skillet on medium heat.
  4. Saute’ the broccolini until tender, about 3-5 minutes. Season with salt and pepper then remove the broccolini and set aside.  In the same skillet, add the tomatoes and garlic and continue to saute’ until the tomatoes burst and are slightly browned. 
  5. Remove the skillet from the heat. 
  6. Toast the bread.
  7. Spread a thin layer of hummus on the toasted bread.
  8. Top with broccolini, tomatoes, and garlic.
  9. Finish by drizzling on the balsamic glaze and enjoy.

How to Meal Prep These Simple Vegan Toast Ideas

  • Roast or sautee veggies ahead of time and reheat them when you are ready to eat.
  • Pre-cut or slice the fruit and store them in the fridge in an air-tight container.
  • Prepare your spreads, like the sweet vegan ricotta, a day or two before and store them in the fridge in an air-tight container.

Cooking your vegetables, preparing your fruit, and making your spreads in advance will definitely save you time and make things a lot easier when you’re ready to eat.

  • ½ cup Vegan Ricotta (I use Kite Hill Almond Ricotta.)
  • 2 Fresh Peaches
  • ¼ cup Pistachios
  • 2 tbsp Agave or Maple Syrup
  • 1 tsp Vanilla Extract
  • ⅛ tsp Salt

Peanut Butter Banana Cacao Toast

  • ¼ cup Peanut Butter
  • 1 Banana
  • 1 Tbsp Cacao Nibs
  • 1 Tbsp Hemp Seeds
  • 2 Tbsp Maple Syrup
  • ½ tsp Cinnamon (optional)

Chocolate Hazelnut Berry Toast

  • ¼ cup Chocolate Hazelnut Spread (I use Justin's Chocolate Hazelnut and Almond Butter.)
  • 1 cup Fresh Strawberries (Hulled and sliced.)
  • ½ cup Fresh Blueberries (Halved)
  • 1 tsp Chia Seeds

Romesco & Roasted Cauliflower Toast

  • ¼ cup Romesco Sauce
  • 1 cup Cauliflower Florets
  • 2 tbsp Olive Oil
  • 1 tsp Italian Herb Seasoning
  • 1 tsp Garlic Powder
  • ½ tsp Paprika
  • ¼ tsp Salt

Hummus Toast with Broccolini & Heirloom Tomatoes

  • 4 Broccolini Stalks (Halved lengthwise )
  • ¼ cup Hummus
  • ¼ cup Heirloom Cherry Tomatoes (Halved)
  • 2 tsp Balsamic Glaze
  • 1 Garlic Clove
  • 3 Tbsp Olive Oil
  • ¼ tsp Salt
  • ¼ tsp Black Pepper


Instructions

  1. Toast the bread using a toaster or on the stove by adding the olive oil to the skillet on medium-high heat. Toast the bread on both sides to your desired darkness, then remove them from the skillet.

Sweet Whipped Ricotta Toast with Fresh Peaches

  1. Add the ricotta, agave syrup, vanilla extract, and salt to a food processor and blend until thoroughly combined and smooth.
  2. Half, remove the pits, and thinly slice the peaches.
  3. Coarsely chop the pistachios.
  4. In a dry skillet on medium-low heat, toast the pistachios until they are slightly browned and fragrant, about 3-5 minutes. 
  5. Spread a generous amount of the whipped sweet ricotta onto the toasted bread then add the sliced peaches and toasted pistachios. Finish with a sprinkle of cinnamon and enjoy.

Peanut Butter Banana Cacao Toast

  1. Slice the banana into ¼-inch thick slices.
  2. Spread a generous amount of peanut butter onto each toast.
  3. Top with sliced bananas, cacao nibs, and hemp seeds. Finish with a sprinkle of cinnamon and a drizzle of maple syrup and enjoy.

Chocolate Hazelnut Berry Toast

  1. Hull and slice the strawberries.
  2. Slice the blueberries in half.
  3. Spread a generous amount of the chocolate hazelnut spread.
  4. Top with the sliced berries, sprinkle with chia seeds, and enjoy!

How to Make Crispy Buffalo Tofu Cutlets w/Creamy Cucumber Celery Salad: Slice the pressed tofu into 4 equal slabs. Add the tofu to a shallow container and drizzle soy sauce on both sides of each of the cutlets, being sure to evenly distribute the sauce as much as possible. Cover the container with the lid and gently shake it to cover all of the cutlets with the sauce even more. Refrigerate and allow the tofu to marinate for at least 30 minutes. While the tofu is marinating, prepare 3 shallow dishes that are big enough for the tofu. The first is for the cornstarch, the second for the plant milk, and the last dish for the breadcrumbs. Coat each tofu cutlet on each side by dipping them into the cornstarch first, then the vegan milk, and last the breadcrumbs. Feel free to press the breadcrumbs into the tofu to help it stick. Set aside. Heat a medium-sized skillet with the oil on medium heat. Fry the tofu cutlets on both sides for 2-3 minutes each or until they are dark golden brown and crispy.
