What is Mango Agua Fresca:

Mango agua fresca is a fruity and delicious Mexican drink typically made with fresh water, mango puree, and sweetened.  It is simple to make and especially refreshing when served over ice on a warm summer day.

Ingredients to Make Mango Agua Fresca:

  • Ripe Mangos: Feel free to use fresh or frozen.  
  • Water: Cold, filtered water.
  • Sweetener: I like to use agave syrup, but you are welcome to use granulated sugar or stevia.
  • Lime: Optional but highly recommended.

How to Make Mango Agua Fresca:

  1. Add the diced mango and water to a blender.
  2. Blend until smooth and there are no more chunks of mango.
  3. Transfer the agua fresca to a pitcher and add the lime juice and sweetener according to your desired taste.
  4. Enjoy chilled and over ice.

What type of mangos should I use?

If you’re in the U.S. the most common mango variety available is the Tommy Atkins mango. But I’ve seen some more authentic Mexican recipes call for honey mangos or the Ataulfo variety. So this will just depend on your preferences and what’s available to you.

Can I use Frozen Mangos?

You can use frozen mango chunks to make Mango Agua Fresca. Frozen mango is a great alternative if you’re unable to use fresh ones. Also, because fruit is usually frozen when it’s ripe and at its peak flavor, you won’t have to worry about choosing the perfect fresh mango.  My tip would be to thaw your frozen mangoes before blending them since making a smoothie isn’t the goal.

Are Agua Frescas Healthy?

Agua frescas can be healthy, but it will depend on your ingredients.  When making my agua frescas, I like to use agave or date syrup, but you can always use monk fruit sugar, coconut sugar, or stevia.  The amount of sweetener you need will depend on how sweet your fruits are and of course, your taste preferences, so keep in mind that you can adjust the sugar levels of the drink to suit your own needs. Not everything has to be healthy to be enjoyed, but ultimately, fruits are full of nutrients and health benefits, so customize your drink however you like.

Ingredients

  • 4 cup Diced Mango (frozen or fresh)
  • 4 cups Water
  • 2 tbsp Sweetener (I use Agave Syrup)
  • 1 Lime (optional)


Instructions

  1. Add the diced mango water to a blender.
  2. Blender until smooth and there are not more visible chunks of mango.
  3. Transfer the mango agua fresca to a pitcher and add the lime juice and sweetener to taste.
  4. Enjoy chilled over ice.

How to Make Crispy Buffalo Tofu Cutlets w/Creamy Cucumber Celery Salad: Slice the pressed tofu into 4 equal slabs. Add the tofu to a shallow container and drizzle soy sauce on both sides of each of the cutlets, being sure to evenly distribute the sauce as much as possible. Cover the container with the lid and gently shake it to cover all of the cutlets with the sauce even more. Refrigerate and allow the tofu to marinate for at least 30 minutes. While the tofu is marinating, prepare 3 shallow dishes that are big enough for the tofu. The first is for the cornstarch, the second for the plant milk, and the last dish for the breadcrumbs. Coat each tofu cutlet on each side by dipping them into the cornstarch first, then the vegan milk, and last the breadcrumbs. Feel free to press the breadcrumbs into the tofu to help it stick. Set aside. Heat a medium-sized skillet with the oil on medium heat. Fry the tofu cutlets on both sides for 2-3 minutes each or until they are dark golden brown and crispy. Remove each tofu cutlet from the skillet and place them on a paper-towel-lined plate or a cooling rack to drain the excess oil. Brush each side of the cutlets with a generous amount of buffalo sauce.
