- 1 Puff Pastry Sheet
- 2-3 Fresh Granny Smith Apples
- 2 tsp Vanilla Extract
- 2 t tsp Lemon Juice
- 1/4 cup Light Brown Sugar (packed)
- 1/4 cup Granulated Sugar
- 1/4 cup Unsalted Vegan Butter
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg
- 1/2 tsp Ground Ginger
- 2 tbsp Cornstarch
Vegan Egg Wash
- 1 tbsp Melted Vegan Butter
- 1 tsp Leftover Apple Filling Syrup
Instructions
- Peel dice the apples into bite-sized chunks.
- Melt the vegan butter in a skillet over medium heat.
- Add the brown and granulated sugars and stir until combined with the butter.
- Add the apples, vanilla extract, lemon juice, spices, and cornstarch. Stir until the apples are fully coated with the spiced syrup.
- Allow the apples to simmer while stirring occasionally for about minutes.
- Remove the apple filling from the heat and let it cool for 5-10 minutes.
- Reserve one teaspoon of syrup from the apple filling for the vegan egg wash. This step is optional.
- Place the puff pastry dough on top of a sheet of parchment paper and gently roll out the dough about 2-3 times in each direction.
- Add the apple filling to the center of the puff pastry and spread into a single layer, leaving about 2-3 inches of the pastry uncovered.
- Fold the edges of the pastry over the apples.
- Brush the edges of the pastry with the vegan egg wash.
- Bake according to the puff pastry package instructions.
- Allow the puff pastry galette to cool before serving. It is best enjoyed fresh.
