Curry Chickpea Salad Sandwiches

Ingredients

  • 8 Slices of Bread
  • 1 can Chickpeas
  • 3/4 cup Vegan Mayonnaise
  • 1/2 Gala Apple
  • 1/4 Red Onion
  • 1/4 cup Fresh Cilantro
  • 1/4 cup Green Onions
  • 2 tbsp Chives
  • 1 1/2 tbsp Curry Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1/4 tsp Sea Salt

Instructions

  1. Drain and rinse the chickpeas.
  2. Add the chickpeas to a food processor and pulse until the chickpeas are roughly chopped, about 5-6 pulses.
  3. Roughly chop the cilantro, green onions, and red onion.
  4. Finely chop the chives.
  5. Chop the apples into bite-size, ¼ inch chunks.
  6. In a small bowl, add the chickpeas, apples, cilantro, green onion, red, onion, chives, mayonnaise, curry powder, galic powder, salt, pepper, and paprika. Mix until fully combined.
  7. Spoon a generous amount of the chickpea salad onto your bread of choice, cover, and enjoy!
