- 6 oz Vegan Chorizo/Soyrizo ((about half package))
- 1 cup Water
- 1 large can/28 oz Canned Diced Tomatoes
- 1 can Black Beans ((drained and rinsed))
- 1 can Red Kidney Beans ((drained and rinsed))
- 1/2 Yellow Onion
- 1/2 Red Bell Pepper
- 1/2 Yellow Bell Pepper
- 1/2 Orange Bell Pepper
- 2 Cloves of Garlic
- 1/4 cup Neutral Oil ((I use avocado oil))
- 3 tbsp Chili Seasoning ((Salt free))
- 1 tbsp Salt
Instructions
- Dice the onion, peppers and garlic.
- In a large pot, heat the oil on medium heat.
- Add the onions, peppers, and garlic. Cook, stirring occasionally, until the onions are translucent, about 5 minutes.
- Add the vegan chorizo (soyrizo), chili seasoning, and salt. Stirring occasionally, cook for an additional 3-5 minutes or until most of the chorizo is browned.
- Add the tomatoes, black beans, kidney beans, and water. Stir and adjust to low heat.
- Allow to simmer for 10-15 minutes, stirring occasionally.
- Cool before serving.
