Easy Vegan Chili

Ingredients

  • 6 oz Vegan Chorizo/Soyrizo ((about half package))
  • 1 cup Water
  • 1 large can/28 oz Canned Diced Tomatoes
  • 1 can Black Beans ((drained and rinsed))
  • 1 can Red Kidney Beans ((drained and rinsed))
  • 1/2 Yellow Onion
  • 1/2 Red Bell Pepper
  • 1/2 Yellow Bell Pepper
  • 1/2 Orange Bell Pepper
  • 2 Cloves of Garlic
  • 1/4 cup Neutral Oil ((I use avocado oil))
  • 3 tbsp Chili Seasoning ((Salt free))
  • 1 tbsp Salt

Instructions

  1. Dice the onion, peppers and garlic.
  2. In a large pot, heat the oil on medium heat.
  3. Add the onions, peppers, and garlic. Cook, stirring occasionally, until the onions are translucent, about 5 minutes.
  4. Add the vegan chorizo (soyrizo), chili seasoning, and salt. Stirring occasionally, cook for an additional 3-5 minutes or until most of the chorizo is browned.
  5. Add the tomatoes, black beans, kidney beans, and water. Stir and adjust to low heat.
  6. Allow to simmer for 10-15 minutes, stirring occasionally.
  7. Cool before serving.
  8. Enjoy!
