These apple pie overnight oats are rich and creamy, with warm spices and sweet stewed apples. A simple and delicious grab-and-go breakfast!


Ingredients

  • 1/2 cup Rolled Oats
  • 1/2 cup Plant Milk (I use almond milk)
  • 1 tbsp Cashew Butter
  • 1 tsp Maple Syrup
  • 1/2 tsp Vanilla Extract
  • 1/8 tsp Ground Cinnamon
  • pinch Sea Salt
  • 1/4 cup Stewed Apples
  • Sliced Almond & Pumpkin Seeds (optional topping)

Instructions

  1. Add the oats, plant milk, cashew butter, maple syrup, vanilla extract, cinnamon, and salt to an airtight container.
  2. Mix well until the cashew butter is fully incorporated.
  3. Top the oatmeal with the stewed apples and allow the oatmeal to set in the fridge for at least 3 hours or overnight.
  4. When ready to eat, top with nuts and seeds of your choice.
  5. Enjoy!
