Ingredients to Make Apple Pie Overnight

  • Rolled Oats:  tend to have the best texture, as instant or quick oats may get soggy.
  • Non-Dairy Milk: I like to use almond milk or soy milk for added protein.
  • Cashew Butter: gives the oats the “pie crust” flavor.
  • Sweetener: maple syrup or agave syrup is optional, as the stewed apples provide a fair amount of sweetness.
  • Vanilla Extract & Cinnamon: deepen the flavors and add warmth.
  • Salt: to balance and heighten the flavors.
  • Stewed Apples: give a burst of apple flavor and provide texture.
  • Toppings: are customizable, but I love having these with sliced almonds and pumpkin seeds.

How to Make Apple Pie Overnight Oats

  1. To a jar or air-tight container, add the oats, dairy-free milk, cashew butter, sweetener, vanilla extract, cinnamon, and salt. 
  2. Stir until the cashew butter is fully combined and there are no more clumps. 
  3. Top the oatmeal with the stewed apples. You can also wait and add the apples after the oatmeal is set.
  4. Allow the oatmeal to set in the fridge for at least 3 hours or overnight. 

Recipe Variations:

  • Extra Creamy: add a few tablespoons of your favorite Greek yogurt or use a creamy oat milk.
  • Higher Protein: mix in a scoop of unflavored or vanilla protein powder.  Adding extra nuts and seeds is also a great way to increase protein without using protein powder. Plant-based Greek-style yogurt is also a good way to add extra protein.
  • Extra Nutrients: stir top with flax seeds, chia seeds, or hemp seeds, for added nutrients that don’t change the flavor of the oats.
  • Meal Prep: multiply the recipe for multiple days of prepped breakfast.
  • Enjoy Warm: pop your oats in the microwave for about 45 seconds or heat them for a few minutes on the stove, saving the stewed apple topping for after.

How to Store:

Ingredients

Units Scale
  • ½ cup Rolled Oats
  • ½ cup Plant Milk (I use almond milk)
  • 1 tbsp Cashew Butter
  • 1 tsp Maple Syrup
  • ½ tsp Vanilla Extract
  • ⅛ tsp Ground Cinnamon
  • pinch Sea Salt
  • ¼ cup Stewed Apples
  • Sliced Almond & Pumpkin Seeds (optional topping)


Instructions

  1. Add the oats, plant milk, cashew butter, maple syrup, vanilla extract, cinnamon, and salt to an airtight container.
  2. Mix well until the cashew butter is fully incorporated.
  3. Top the oatmeal with the stewed apples and allow the oatmeal to set in the fridge for at least 3 hours or overnight.
  4. When ready to eat, top with nuts and seeds of your choice.
  5. Enjoy!
