This easy rice cooker coconut rice is ready in less than 30 minutes and made with only four ingredients. Fluffy and flavorful, this rice is the perfect dinner side to serve with your favorite protein and veggies.

Ingredients to Make Rice Cooker Coconut Rice:

  • Rice: I use jasmine rice for this recipe, but you can also use basmati rice.
  • Coconut Milk: canned full-fat coconut milk gives the best flavor.
  • Water
  • Salt: this is optional, but recommended to boost the coconut flavor in the rice.
This easy rice cooker coconut rice is ready in less than 30 minutes and made with only four ingredients. Fluffy and flavorful, this rice is the perfect dinner side to serve with your favorite protein and veggies.

How to Make Rice Cooker Coconut Rice:

  1. Thoroughly rinse the rice until the water is no longer cloudy from the starch. 
  2. Add the rinsed rice, coconut milk, water, and salt to the rice cooker.
  3. Give the rice a quick stir to combine.
  4. Set the cooker to the white rice setting and let the cooker do all the work.
  5. When the rice is done, fluff with a fork and leave it on the “keep warm” setting until ready to serve. I like to serve this easy coconut rice with a squeeze of lime alongside some of my favorite meals.

How I Like to Serve Coconut Rice: 

  • Alongside curries, stews, and chili.
  • With my favorite tofu dishes, like jerk or almond butter tofu.
  • Wrapped in a burrito with my favorite chipotle black beans. 
  • With stir-fried veggies and protein.

How to Store:

Coconut rice can be stored in the fridge in an airtight container for up to 3 days or in the freezer for up to 3 months.
