What You’ll Need:
- Puff Pastry Dough: most store-bought puff pastry dough is vegan friendly, but you’ll just want to check the labels.
- Fresh Granny Smith Apples
- Vanilla Extract
- Lemon Juice
- Sugars: Light brown sugar and granulated sugar
- Unsalted Vegan Butter
- Spices: Cinnamon, Ground Nutmeg, & Ground Ginger
- Cornstarch: To thicken the apple filling
Optional “Egg Wash”
- Melted Vegan Butter
- Leftover Apple Filling Syrup


How to Make an Apple Puff Pastry Galette:
- Peel and dice the apples.
- Melt the butter in a skillet over medium heat.
- Add the sugars and stir until combined with the butter.
- Add the apples, vanilla extract, lemon juice, spices, and cornstarch. Stir until the apples are fully coated.
- Allow to simmer while stirring occasionally for at least 10 minutes.
- Remove the apple filling from the heat and let it cool for 5-10 minutes.
- Reserve one teaspoon of apple filling syrup. This is an optional step.
- Gently roll out the pastry dough 2-3 times in each direction.
- Add the apple filling to the center of the puff pastry and spread it into a single layer.
- Fold the edges of the pastry over the apples.
- Brush the edges of the pastry with the “egg wash”.
- Bake according to the puff pastry package instructions (this may vary depending on the brand).
- Allow to cool for 5-10 minutes before serving. It is best enjoyed fresh.

How to Store The Pastry
Leftover apple puff pastry galette can be stored in an airtight container in the fridge for up to 3 days. It can be reheated in the microwave for 30-45 seconds, but I recommend popping it back in the oven for about 5-7 minutes at 350 ℉.

- Remove the apple filling from the heat and let it cool for 5-10 minutes.
- Reserve one teaspoon of syrup from the apple filling for the vegan egg wash. This step is optional.
- Place the puff pastry dough on top of a sheet of parchment paper and gently roll out the dough about 2-3 times in each direction.
- Add the apple filling to the center of the puff pastry and spread into a single layer, leaving about 2-3 inches of the pastry uncovered.
- Fold the edges of the pastry over the apples.
