Easy Curried Sweet Potato and Chickpea Bowls (Vegan)

These fragrant and deliciously easy curried sweet potato and chickpea bowls with harissa hummus dressing are easy to make and produce-packed. Great for a quick, healthy comfort food dinner.

Ingredients To Make Curried Sweet Potato and Chickpea Bowls:

  • Sweet Potatoes: are a great source of fiber, potassium, beta-carotene, and vitamin C.
  • Chickpeas: are an excellent protein source. I like to use canned chickpeas or the ones that come in a carton with no salt added, just be sure to drain and rinse them. 
  • Veggies: red onion, salad greens, cucumber, yellow bell pepper.
  • Curry Seasoning: This warm and comforting spice adds so much flavor to the sweet potatoes and chickpeas.
  • Salt: to heighten the flavors.
  • Oil: for roasting. I prefer to use olive oil.

Harissa Hummus Dressing:

  • Hummus: being creamy and mild in flavor make it such a simple base for sauces or dressings.
  • Lime: to add some acidity and to brighten up the flavors of the dressing.
  • Harissa Paste: for a slightly spicy kick.
  • Salt: to help bring out all of the flavors.
  • Water: to thin out the dressing. Don’t worry, this won’t dilute the flavors.
These fragrant and deliciously easy curried sweet potato and chickpea bowls with harissa hummus dressing are easy to make and produce-packed. Great for a quick, healthy comfort food dinner.

How to make Curried Sweet Potato and Chickpea Bowls:

  1. Preheat the oven to 400℉.
  2. Drain and rinse the chickpeas.
  3. Prep the veggies.  Chop the sweet potatoes, yellow bell pepper, and cucumber into bite-sized pieces and dice the red onion.
  4. Coat. Add the sweet potatoes, chickpeas, olive oil, curry seasoning, and salt to a medium-sized bowl and mix until the sweet potatoes and chickpeas are fully coated in the seasoning and oil.
  5. Roast.  Spread the chickpeas and sweet potatoes in a single layer on one side of a lined baking tray and roast for 20 minutes then remove the tray from the oven and add the peppers and onions to the other side of the tray and continue to roast for an additional 10 minutes.
  6. Assemble.  Start with your greens and cucumbers and top with your roasted sweet potatoes, chickpeas, peppers, and onions. Drizzle with the harissa hummus dressing and enjoy!

For the Harissa Hummus Dressing:

  1. Mix. In a small bowl, mix together the hummus, harissa, paste, lime juice, salt, and warm water. For a thinner dressing, feel free to tad more warm water.

Can I meal prep this recipe?

Absolutely! This recipe can be stored in the fridge for up to three days, you’ll just want to keep your cold salad greens separate until you are ready to eat. You’ll just reheat your roasted veggies and build your bowl.

Ingredients

Units Scale
  • 4 Small Sweet Potatoes (or 2 Large)
  • 1 ½ cup Canned Chickpeas (Drained & Rinsed)
  • 1 Red Onion
  • 4 cups Salad Greens
  • 1 Cucumber
  • 1 Yellow Bell Pepper
  • 2 tbsp Olive Oil
  • 2 tbsp Curry Seasoning
  • ½ tsp Sea Salt

Harissa Hummus Dressing

  • ½ cup Hummus
  • 1 tbsp Lime Juice
  • 1 ½ tsp Harissa Paste
  • ¼ tsp Sea Salt
  • 2 tbsp Warm Water (adjust the amount for a thicker or thinner dressing.)


Instructions

  1. Preheat the oven to 400° F.
  2. Drain and rinse the chickpeas.
  3. Chop the sweet potatoes, onion, cucumber, and yellow bell pepper into bite-sized pieces.
  4. In a medium-sized bowl, add the sweet potatoes, chickpeas, olive oil, curry seasoning, and salt. Mix until the sweet potatoes and chickpeas are fully coated.
  5. Add the sweet potatoes and chickpeas to one side of a lined baking tray and roast for 20 minutes. Then remove the tray from the oven, add the peppers and onions to the other side, and continue to roast for 10 minutes. Remove from the oven and allow to cool for about 5 minutes.
  6. Layer your bowl, starting with the greens and cucumbers. Top with the roasted veggies and chickpeas and drizzle with the harissa hummus dressing.

Harissa Hummus Dressing

  1. Mix together the hummus, harissa paste, lime juice, sea salt, and warm water. Add more or less water for your desired consisitency.

How to Make Crispy Buffalo Tofu Cutlets w/Creamy Cucumber Celery Salad: Slice the pressed tofu into 4 equal slabs. Add the tofu to a shallow container and drizzle soy sauce on both sides of each of the cutlets, being sure to evenly distribute the sauce as much as possible. Cover the container with the lid and gently shake it to cover all of the cutlets with the sauce even more. Refrigerate and allow the tofu to marinate for at least 30 minutes. While the tofu is marinating, prepare 3 shallow dishes that are big enough for the tofu. The first is for the cornstarch, the second for the plant milk, and the last dish for the breadcrumbs. Coat each tofu cutlet on each side by dipping them into the cornstarch first, then the vegan milk, and last the breadcrumbs. Feel free to press the breadcrumbs into the tofu to help it stick. Set aside. Heat a medium-sized skillet with the oil on medium heat. Fry the tofu cutlets on both sides for 2-3 minutes each or until they are dark golden brown and crispy. Remove each tofu cutlet from the skillet and place them on a paper-towel-lined plate or a cooling rack to drain the excess oil. Brush each side of the cutlets with a generous amount of buffalo sauce.
