Easy Puff Pastry Apple Turnovers

Ingredients to Make Puff Pastry Apple Turnovers:

  • Puff Pastry:  most store-bought puff pastry is “accidentally vegan” but always check the label.
  • Apple Pie Filling: you can use store-bought or use my homemade apple pie filling recipe.
  • Powdered Sugar: I recommend using organic powdered sugar to ensure it is vegan.

Vegan Egg Wash:

  • Vegan Butter: I like to use salted butter for a richer flavor.
  • Apple Pie Filling Syrup: reserve a few tablespoons from canned or cooked filling.

How to Make Puff Pastry Apple Turnovers:

  1. Using a floured or parchment-covered surface, roll out and cut each puff pastry roll into 4 equal squares.
  2. Add about a ¼ cup of apple pie filling to each pastry square and, picturing the pastry in a diamond shape, fold one corner over to the other forming a triangle. 
  3. Using a fork, firmly press down about ¼-inch of the open edges to seal the pastry. Repeat until all of the pastries are sealed.
  4. For the egg wash, using a small bowl, mix the melted butter and reserved syrup from the apple pie filling.
  5. Arrange the pastries about 1 inch apart on a large parchment paper-lined baking sheet.
  6. Brush with the vegan egg wash and bake according to the puff pastry package instructions.
  7. Allow the pastries to cool before dusting with powdered sugar and serving.

Tips & Tricks: 

  • Keeping the puff pastry cold will help it to form the flakiest result, so if you find that your pastry has warmed to room temperature, pop your tray of prepared turnovers into the freezer for 5-10 minutes before baking.

How to Store:

Leftover apple turnovers can be stored in an airtight container in the fridge for up to 3 days.  It can be reheated in the microwave for 30-45 seconds, but I recommend popping it back in the oven for about 5-7 minutes at 350 ℉.
