  • Coconut Milk: unsweetened full-fat coconut milk. This can be substituted with any other plant-based milk, but it will not be as creamy.
  • Sweetener: agave or maple syrup
  • Lemon Juice: balances the sweetness and helps enhance the dragon fruit flavor.

  1. Add the coconut milk, dragon fruit, sweetener, and lemon juice to a blender. Blend until smooth and fully combined.
  2. In a medium-sized bowl or container, add the blended liquid and chia seeds. Stir until the chia seeds are fully incorporated.
  3. Cover and allow the pudding to set in the fridge for 1 hour, then stir the mixture and return it to the fridge to finish setting for an additional 2 hours or overnight.
  4. Serve with your favorite fruit and granola.
