- Cucumber: English cucumber or mini seedless cucumbers work best.
- Celery Stalks
- Fresh Cilantro
- Vegan Ranch Dressing: my creamy homemade vegan ranch brings it all together.
- Crispy Onions or Shallots: This adds more texture, crunch, and flavor.

How to Make Creamy Cucumber Celery Salad:
- Using a mandoline slicer or sharp knife, thinly slice the cucumbers and celery.
- Remove the cilantro from the stems and roughly chop.
- Add the cucumbers, celery, cilantro, and ranch dressing to a bowl. Mix well until all of the cucumbers are covered on both sides.
- Top the salad with the crispy fried onions and any other topping you like.
- Eat the salad as a snack or enjoy as a side or topping on your favorite sandwich.


How to Store Creamy Cucumber Celery Salad:
Store the cucumber salad in the fridge in an airtight container for just 1 day. Because the cucumbers become more watery over time, I recommend precutting the cucumber and celery and waiting until you are ready to serve to assemble the salad, giving the cucumbers a pat dry with a paper towel beforehand. This will help you to avoid a soggy salad.
