This crisp and creamy cucumber celery salad is the perfect side dish or crunchy sandwich topper. Made with refreshing cucumber, celery, herbs, and a delicious homemade vegan ranch dressing, this flavorful dish is sure to please.

Aside from being quick and easy to make, this recipe is also very customizable. Feel free to add in as many of your favorite ingredients that go great with ranch dressing. More fresh herbs, like chives, parsley, dill or green onions. Extra fruits or veggies, like tomatoes, apples, or carrot ribbons. Even though I like this salad as is, I occassionally like to throw in some black olives from time to time.

Ingredients to Make Creamy Cucumber Celery Salad:

  • Cucumber: English cucumber or mini seedless cucumbers work best.
  • Celery Stalks
  • Fresh Cilantro
  • Vegan Ranch Dressing: my creamy homemade vegan ranch brings it all together.
  • Crispy Onions or Shallots: This adds more texture, crunch, and flavor.
This crisp and creamy cucumber celery salad is the perfect side dish or crunchy sandwich topper. Made with refreshing cucumber, celery, herbs, and a delicious homemade vegan ranch dressing, this flavorful dish is sure to please.

How to Make Creamy Cucumber Celery Salad:

  1. Using a mandoline slicer or sharp knife, thinly slice the cucumbers and celery. 
  2. Remove the cilantro from the stems and roughly chop.
  3. Add the cucumbers, celery, cilantro, and ranch dressing to a bowl. Mix well until all of the cucumbers are covered on both sides.
  4. Top the salad with the crispy fried onions and any other topping you like.
  5. Eat the salad as a snack or enjoy as a side or topping on your favorite sandwich.

How to Store Creamy Cucumber Celery Salad:

Store the cucumber salad in the fridge in an airtight container for just 1 day. Because the cucumbers become more watery over time, I recommend precutting the cucumber and celery and waiting until you are ready to serve to assemble the salad, giving the cucumbers a pat dry with a paper towel beforehand. This will help you to avoid a soggy salad.
