I’m really big on smoothies during the Spring and Summer months. But it’s really easy to get bored with the same fruity flavors and crave something that tastes a little more decadent. That’s why this mint chip green smoothie is great. It’s creamy with just the right amount of mint and chocolate to satisfy a sweet craving. And the best part, it’s still healthy and nutritious.
INGREDIENTS IN A MINT CHIP GREEN SMOOTHIE
- Bananas: make the smoothie rich and creamy.
- Spinach: for some much needed nutrients.
- Spirulina: gives the smoothie it’s green color and is also full of great nutrients
- Cacao Nibs: for the chocolate bite and a little bit of crunch. Plus, these are packed with antioxidants.
- Mint Extract: to add the minty flavor.
- Vanilla Extract: to heighten all of the sweet flavors.
- Cashew Butter: for a more rich and creamy texture and for added protein.
- Plant Milk: to help combine the ingredients and make them smooth in the blender.
HOW TO MAKE A MINT CHIP GREEN SMOOTHIE
- Blend. Toss all of the ingredients into a blender and blend on medium or high until the smoothie is smooth and all of the ingredients are combined. You may have to stop periodically to scrape down any loose ingredients from the side of the blender using a rubber spatula.
SWAPS & ADDITIONS
- For added protein, just add a scoop of your favorite plant-based protein powder. I would recommend a chocolate or vanilla flavor since these won’t clash with the mint.
- Not a fan of bananas? Swap the bananas for avocados. This smoothie doesn’t have a strong banana flavor, but if bananas bother you, avocados can add the same creamy texture with very little flavor.
- Any greens are great. If you don't have spinach on hand, kale or Swiss chard are also great additions or swaps for this smoothie.
