Easy Chickpea Salad Sandwiches

These chickpea salad sandwiches are a flavorful blend of fresh herbs and elevated with just a few key spices.  A quick sandwich recipe that can easily be added to your vegan meal prep for lunch or dinner. Whether you decide to have it as a regular sandwich or have it in a wrap, this tasty recipe won’t disappoint.

INGREDIENTS FOR CHICKPEA SALAD SANDWICHES

  • Bread: I like sourdough or a soft white, but this is totally up to you.
  • Chickpeas: I use canned chickpeas for convenience. 
  • Vegan Mayo: For a creamy consistency and to bind the mixture together.
  • Gala Apple: To compliment the herbs and for a nice sweet bite.
  • Herbs and Aromatics: Green onion, red onion, cilantro,  and chives.
  • Spices: Black pepper and paprika.
  • Sea Salt: To help bring out all the different flavors.
These chickpea salad sandwiches are a flavorful blend of fresh herbs and elevated with just a few key spices.

HOW TO MAKE CHICKPEA SALAD SANDWICHES

  1. Drain and rinse the chickpeas, I like to do this to remove any excess salt.
  2. Chop the herbs and onions. Roughly chop the cilantro, green onions and red onion. Finely chop the chives.
  3. Chop the apple into ¼ inch bite-sized pieces.
  4. Mash the chickpeas. In a shallow dish, add the chickpeas and mash with a fork or potato masher. 
  5. Mix it all together. In a separate bowl, add the mashed chickpeas, apples, chopped onions and herbs, mayo, salt, pepper, paprika. Mix until combined. 
  6. Sandwich it. Spoon a generous amount of the chickpea salad onto your bread of choice, cover, and enjoy!

CAN I MAKE THESE CHICKPEA SALAD SANDWICHES WITHOUT MAYO?

Absolutely. Feel free to swap out the vegan mayonnaise for a plant-based plain yogurt or about 2 mashed avocados.

Ingredients

  • 8 Slices of Bread
  • 1 can Chickpeas
  • ¾ cup Vegan Mayonnaise
  • ½ Gala Apple
  • ¼ Red Onion
  • ¼ cup Fresh Cilantro
  • ¼ cup Green Onion
  • 2 tbsp Fresh Chives
  • ½ tsp Black Pepper
  • ½ tsp Paprika (optional)
  • ¼ tsp Sea Salt


Instructions

  1. Drain and rinse the chickpeas.
  2. Add the chickpeas to a food processor and pulse until the chickpeas are roughly chopped, about 5-6 pulses.
  3. Roughly chop the cilantro, green onions, and red onion.
  4. Finely chop the chives.
  5. Chop the apples into bite-size, ¼ inch chunks.
  6. Add the chickpeas to a shallow bowl and mash with the back of a fork or potato masher.
  7. In a small bowl, add the mashed chickpeas, apples, cilantro, green onion, red, onion, chives, mayonnaise, salt, pepper, and paprika. Mix until fully combined.
  8. Spoon a generous amount of the chickpea salad onto your bread of choice. Cover.
  9. Enjoy!

Cornstarch: this will make the cutlets extra crispy Soy Sauce: will add flavor to the tofu as a marinade. Toppings: I like to top this with my creamy cucumber celery salad and sprinkle of vegan feta. How to Make Crispy Buffalo Tofu Cutlets w/Creamy Cucumber Celery Salad: Slice the pressed tofu into 4 equal slabs. Add the tofu to a shallow container and drizzle soy sauce on both sides of each of the cutlets, being sure to evenly distribute the sauce as much as possible. Cover the container with the lid and gently shake it to cover all of the cutlets with the sauce even more. Refrigerate and allow the tofu to marinate for at least 30 minutes. While the tofu is marinating, prepare 3 shallow dishes that are big enough for the tofu. The first is for the cornstarch, the second for the plant milk, and the last dish for the breadcrumbs. Coat each tofu cutlet on each side by dipping them into the cornstarch first, then the vegan milk, and last the breadcrumbs. Feel free to press the breadcrumbs into the tofu to help it stick. Set aside. Heat a medium-sized skillet with the oil on medium heat. Fry the tofu cutlets on both sides for 2-3 minutes each or until they are dark golden brown and crispy. Remove each tofu cutlet from the skillet and place them on a paper-towel-lined plate or a cooling rack to drain the excess oil. Brush each side of the cutlets with a generous amount of buffalo sauce.
